The cuisine of Bruno Loubet is representative of the current re-evaluation of down-to-earth food, skillfully prepared and abundantly flavorful. It finds its roots in the cuisine of his native Aquitaine, and much of his inspiration comes from his grandmother's repertoire. The results are both strikingly original and consistently appealing.
